Coffee Crusted New York Strip Steak

The wife and I recently returned from a visit to the in-laws with yet again more meat. For those who don’t already know, every time we visit, Selma’s parents always send us home with copious amounts of meat. This time, they sent us home with a whole short loin. Yep, this is what your strip steak looks like before it’s been butchered into neat, individual portions. 

So naturally I took it upon myself to cut some 2-inch thick portions for dinner for the next few nights. The beauty of butchering it yourself is that you can make your own cuts to your desired thickness. 

I also wanted to try a new recipe that I’ve seen floating around on the interwebs that involved using coffee grounds as a rub. I know it sounds weird using coffee as a seasoning but it actually works! The coffee adds a smokey crust and a unique kick of flavor that complements the natural flavors of the steak. Trust me, just try it and see for yourself!

The Rub: 

  • 4 tbsp coarse ground coffee
  • 1 tbsp paprika
  • 1 tsp chili powder
  • 1 tsp cayenne pepper
  • 1 tsp garlic power
  • 1 tsp dried oregano 

Step 1: Season the steaks with generous amounts of salt and pepper and then with The Rub. Use your hands to push the seasoning into the steaks. 

Step 2: In a large, pre-heated cast iron skillet with a tablespoon of olive oil, sear the steaks at medium-high heat until cooked to your liking. Remove from the pan and let rest for 5-10 minutes before slicing. 

 

Pro tip: For best results, you can also sous vide your steak first and then add the rub right before you sear the steaks. This will keep the rub from burning too much and give you perfect results every time.
