Reduction Ready Review: Mushroom Risotto with White Wine Reduction

A few weeks back, our good friend Miles came into town bringing with him 3 bottles of his very own reductions from his new company, Reduction Ready. What are reductions you may ask? Excellent question. A reduction is simply the process of thickening or intensifying the flavor of a liquid by slowly simmering. These ready-made reductions save you the time and effort of making your own so you can focus on what you do best – cooking! These reductions are an all-natural, low-cal way to add a burst of flavor to practically any dish. Selma and I were very eager to try them all out so we took the weekend to incorporate them into some of our favorite dishes.

First up is a little twist on a favorite that we make quite often – Creamy Mushroom Risotto.

What you’ll need:

  • 4 cups chicken broth (if you’re vegetarian, you can also sub for vegetable broth)
  • 10 ounces portobello mushrooms, sliced
  • 10 ounces white mushrooms, sliced
  • 1 shallot, diced
  • 1 cup Arborio or short grain rice
  • 1/3 cup white wine (I use Sauvignon Blanc, but any dry white wine will work)
  • 2 tablespoons chopped chives or scallions
  • 2 tablespoons butter
  • 3 tablespoons grated parmesan cheese
  • 2 tablespoons White Wine Reduction

Makes 4 servings

Step 1: Prep all of your ingredients. Slice your mushrooms, dice the shallots and chop your chives/scallions. Place your broth in a sauce pan over low heat and bring to a simmer.

Step 2: In a large pan, add in 1 tbsp olive oil and cook down your mushrooms until they begin to wilt. Set aside in a bowl.

Step 3: In the same pan, over medium-high heat, add in 1 tbsp olive oil and your shallots. Once your shallots begin to sweat, add in your rice and stir until your rice is evenly coated in the oil.

Step 4: Next, add in your white wine and let everything simmer together for 1-2 min.

Step 5: Over medium heat, begin adding in your stock 1/2 cup at a time, stirring constantly. The point is to let the rice absorb the broth while it cooks. You will want to stir continuously throughout this process so your rice doesn’t burn.

Step 6: Once all of the stock has been incorporated and your rice is fully cooked, turn off the heat and add in your mushrooms, butter, parmesan cheese and your White Wine Reduction.

Give everything a good stir and serve immediately.

We usually pair this with spicy sausages or roasted chicken but this recipe is just as delicious on its own. Selma and I have made this plenty of times in the past but the addition of the White Wine Reduction adds another layer of flavor and complexity to the dish. The sweet yet tart notes of the reduction really elevate this dish to a whole new level and is something you need to experience for yourself.
