Molten Chocolate Cakes for Two

This past weekend, Selma found this fantastic recipe for these individual chocolate cakes from Sally’s Baking Addiction and we just had to make them. These are the perfect indulgent treat for two and only take ~30 min to make from start to finish so there’s no need to plan ahead for this awesome dessert.

What you’ll need:

  • 2 – 6 or 7 ounce ramekins. We used Le Creuset 7 oz. ramekins and they worked really well.
  • 3 ounces semi-sweet chocolate
  • 1/4 cup heavy cream
  • 3 Tablespoons packed light brown sugar
  • 2 Tablespoons vegetable oil
  • 2 Tablespoons egg (crack 1 egg, beat it, use 2 Tbsp)
  • 1/2 teaspoon vanilla extract
  • 6 Tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon baking soda

Step 1: Spray each ramekin lightly with nonstick spray and line a large baking sheet with parchment paper or a silicone baking mat. Also, preheat your oven to 350 degrees.


Step 2: Roughly chop 2 ounces of semi-sweet chocolate. We used Trader Joe’s Chocolate Chunks and they worked brilliantly. Set the other ounce aside for later.


Step 3: Heat the cream in a small sauce pan to a low simmer. Combine the chocolate and heavy cream in a medium heatproof bowl and let it stand for 1 min. Stir until melted and combined.


Step 4: Once melted and smooth, whisk in the brown sugar until no lumps remain. Whisk in the oil, egg, and vanilla until you get a smooth and velvety texture.


Step 5: In a small bowl, whisk the flour, baking powder, and baking soda together. Pour into the wet ingredients and fold with a rubber spatula until all of the ingredients are mixed together.


Step 6: Pour evenly into the ramekins (around 3/4th full). If you have too much batter, you can just make a third cake like we did. Drop the remaining chocolate chunks into the centers of the cakes and use a spoon or knife to fully submerge it.


Step 7: Bake at 350 degrees for 15-16 minutes, rotating the pan at the 8 minute mark. The centers are supposed to be slightly gooey since there is melted chocolate inside. Serve immediately while still warm.
