Did you like brussels spouts growing up? Or do you really even like them now? Me neither. They were and still are in some ways the worst. They have a strange taste and are really bland on their own. I’ve tried a bunch of different seasonings and sauces to make them taste better but nothing seems to do the trick. However, in comes their only saving grace – bacon (shocking I know). Bacon can make an old shoe taste amazing so I knew it would work on these little guys. And now, I can’t get enough of these little bulbous wonders.
What you will need:
- 1lb of brussels sprouts (or one of these awesome stalks from Trader Joe’s)
- 1/2 onion, diced
- 4-5 strips of bacon
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 2 tbsp honey
- Juice and zest of half a lemon
- Salt and pepper
Makes 4 servings
Step 1: Cook your bacon. You can honestly never have enough bacon in your life.
Roughly chop and set aside.
Step 2: Prep your veggies. If your sprouts came on a stalk like this, begin by trimming off the bulbs with a paring knife. I like to cut my brussels sprouts in half as well but as long as they’re roughly the same size you should be fine. You just want everything to cook evenly.
Step 3: Combine your veggies in a large mixing bowl and add in the honey, balsamic vinegar, olive oil, bacon, lemon juice, zest, salt and pepper and give everything a gentle toss to ensure that everything is evenly coated.
Step 4: Place on a baking sheet and bake for 25-30 min at 350 degrees or until they are fork tender.
And there you have it! Brussels sprouts that even your kids (or man-child) will enjoy. The bacon helps provide flavor and balance to the dish while the lemon juice and honey helps to keep things light. It’s surprising how delicious these little guys can be with the right ingredients.
