Kung Pao Chicken Lettuce Wraps

While trying to keep things interesting on the home front without doing much work, we decided to put a twist on a weekly staple. You may recall our love for Trader Joes frozen meals because they are really tasty and convenient for those nights when you don’t feel like cooking a whole meal.

The concept was fairly simple. We like kung pao chicken. We like lettuce wraps. Therefore, we would probably like kung pao chicken lettuce wraps.

The recipe:

  • 1 bag of Trader Joes Kung Pao Chicken
  • 1 ripe avocado
  • 1 lemon
  • 1 bunch of romaine lettuce
  • Salt and pepper to taste

We started by cooking the chicken like we normally do. It only takes a grand total of ~15 min from start to finish.

Next, we (mainly Selma) sliced up some avocado and drizzled the lemon juice over it to keep them fresh and green.

Then, we washed and prepped some whole leaf romaine lettuce. We chose romaine because of it’s large surface area but you could also sub with ice berg or bib lettuce.

Finally, we built our wraps and enjoyed them with a side of white rice and pot stickers. The lemon juice and avocado really brings this wrap to a whole new level and is definitely worth a try.
