Blueberry Chocolate Chip Buttermilk Pancakes

Whenever we feel like making pancakes or waffles, we reach straight for the pre-made mix out of a box and simply add water. However, the more we thought about it, the more we were grossed out by all of the preservatives and dehydrated milk. Thus, we set off to make our own mix. It’s actually surprisingly simple and requires ingredients you most likely already have lying around.

The recipe: 

2 cups flour
1 3/4 cups buttermilk
2 tablespoons baking powder
2 eggs, beat them separately before adding to mixture
1/4 cup butter, melted (1/8 of a pound)
3 tablespoons sugar
1 teaspoon salt

Start by sifting the flour to remove any large clumps.


Then mix in all the dry ingredients.


Next, add in the buttermilk (or regular milk if that’s what you prefer), eggs, and melted butter.


Mix until everything is nice and even. Set aside in the fridge for 10 min.


This batter will be thicker than most but will result in taller, lighter and fluffier pancakes. Triple threat pancakes!


We added blueberries and chocolate chips but you can be as creative as you like here. The world is your oyster.
