Baja Fish Tacos

Last weekend, Selma and I decided it was time to get serious and finally make some fish tacos. We’ve never made fish tacos before so this was another first for us. We were hoping that it would go a little better than the Butter Chicken (although that wasn’t a huge disaster in the scheme of things).

We started off marinating some fresh Atlantic cod in chili power, cumin, lime juice, olive oil, salt and pepper. IMG_8091

Let it settle in the fridge for 15 minutes.            IMG_8094

While the fish is marinating, you can either make some coleslaw or stalk someone on facebook. We decided to make some slaw.

We used red cabbage, cilantro, onions, lime juice, olive oil, salt and pepper. It’s a really light slaw with no mayo but it still packs a bunch of flavor (and is way healthier for you).





We did use a lot of onion which sort of overpowered the slaw. Next time we’ll dial it back a notch. IMG_8107

Once the slaw is ready, you can start on the fish. You could batter and fry the fish but who has time for that nonsense. The fish takes almost no time on a pan or grill and is also much healthier this way. Roughly 3 minutes on each side should suffice. IMG_8109

We served it with some cilantro-lime rice and some hot corn tortillas. IMG_8112


We love fish tacos. Enough said.
