Banana Bread Cupcakes

When life gives you black bananas, you make banana bread cupcakes. Duh.IMG_8027

No but seriously, you do. Banana bread is one of my favorite types of bread but I’ve never actually made it myself. And I still technically haven’t made it myself because Selma made it for me this time around!

Selma gets really grossed out by extra ripe bananas them so naturally I made her peel them while I sat back comfortably and took pictures.


They really don’t look that bad at all so I don’t know what all the fuss was about. IMG_8030

The recipe we used came from another blog called eatliverun and they looked amazing so we couldn’t not make them.

2 1/3 cup all purpose flour

3/4 tsp baking soda

1/2 tsp baking powder

1/2 tsp salt

2 extra-ripe bananas, mashed with a fork until smooth

1 tsp vanilla extract

1 stick butter, softened

1 cup granulated sugar

2 eggs

1/4 tsp nutmeg

1/2 tsp ground cinnamon

1/3 cup well-shaken buttermilk

1/2 cup walnuts (optional)

for cream cheese frosting:

1 stick butter, softened

8 oz cream cheese, softened

3 cups powdered sugar

2 tsp vanilla extract

Selma started by mashing the bananas with the vanilla and buttermilk into a baby-food consistency. This could probably pass as baby food at this point.


Next, she whipped together the butter and sugar and add in the eggs one at a time.IMG_8032

Then, mix together all the wet and dry ingredients. By the way, who needs a fancy kitchen-aid mixer when you have your very own Kitchen Aid (I’m talking about myself).

While the cupcakes are baking, prepare the frosting. IMG_8039

Selma also proceeded to fashion her own piping bag out of a ziplock bag with a hole cut in it. It worked surprisingly well but something tells me that we will be investing in a piping kit in the near future.

And there you have it. No more wasted bananas and a bunch of delicious cupcakes for the week! It was really hard to not eat all of them at once.
