Guinness-Braised Short Ribs

For my Birthday, Selma got me something that I’ve been eyeing for a very long time. No Le Creuset set is complete without their flagship 5.5 qt. Round French Oven. Best girlfriend ever.

I was so excited to use this that I spent an entire day at work looking for the perfect recipe for my baby’s first culinary debut (I don’t do much at work…). I decided that Guinness-Braised Short Ribs would be the perfect recipe to try. It’s super easy to prep and basically cooks itself. This french oven is perfect for turning cheap/tough cuts of meat into tender fall-off-the-bone meals.

Serve the short ribs over a bed of creamy mashed potatoes and prepare for a serious food coma.

This was honestly one of the best meals I’ve made thus far. It was incredibly easy to make and was actually very inexpensive. I think the priciest part of the whole meal was the Guinness. Needless to say, I will be making this again very soon.

 

The recipe I used was as follows:

  • 5 lbs lean beef short ribs
  • freshly ground black pepper
  • salt
  • olive oil
  • Baby carrots
  • 1 large onion, chopped
  • 3 ribs of celery, diced
  • 2 cans Guinness stout
  • 1 Tbls. fresh garlic
  • 5 fresh bay leaves

Serves roughly 4 people
