If you’re ever not in the mood to cook a fancy ass dinner but still want to eat right, this is the meal for you. This entire meal honestly took me less than half an hour to prep and cook.
Start off with some trimmed chicken breasts and season any way you want. I added pepper, rosemary, and some all purpose seasoning. Sear in pan on medium heat with a drizzle of olive oil until fully cooked.
While the chicken is cooking, start your rice (brown rice is also good, I’m not a riceist). This next step is a neat little trick that I picked up in my undergrad days. Wait until your rice is almost done cooking and most of the water has been absorbed and then add any raw veggies you want to steam.
Once the rice is finished cooking, your veggies should be nice and steamed. Smart.
