Happy Birthday Selma!

In celebration of her day of birth, we decided to make funfetti cupcakes from scratch. I found a recipe online and it looked easy enough. Plus we had all of the ingredients so it was a win-win situation…or so we thought.

*As a disclaimer, we wouldn’t use this recipe again. Selma hated them. Happy Birthday to the ground.

Anywho, the recipe was pretty straight forward. Mix all the dry ingredients together.

Mix all of the wet ingredients. And then mix it all together.

My roommate has this awesome measuring cup. We thought it looked like a metal urinal. Moving on…

And this was the point that I realized something wasnt quite right…

In hindsight, I would recommend adding the sprinkles once you have the batter in the cups and then doing a quick stir with a toothpick. These little bastards bleed quickly. Too quickly. Suspiciously quickly….

Making the frosting while we waited for the cupcakes to bake. As a side note, I went out and got that little bag of powdered sugar while the cupcakes baked only to find out we had enough after all….2013-09-24 21.32.04 2013-09-24 22.10.46 2013-09-24 22.11.01

And they didn’t LOOK terrible.

They just tasted a little too doughy. I mean i liked them, but Selma thought they were too sweet. And as Selma’s mom always says: “you win some, you lose some, and then you win some, and then you lose some” 2013-09-24 22.23.19

Here is the recipe that we used. I modified it a bit to what i THINK it should have been. Use at your own risk.

Cupcakes:

  • 1 and 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 large egg
  • 1/4 cup yogurt (plain or vanilla; or greek yogurt; or sour cream)
  • 3/4 cup milk (cow’s milk; or soy milk; or almond milk)
  • 2 teaspoons vanilla extract
  • 1/3 cup sprinkles

Buttercream Frosting:

  • 2 cups powdered sugar
  • 1 stick unsalted butter
  • 1 teaspoon vanilla extract
  • 1 egg white

In conclusion, it looks like I will be buying her some cupcakes tonight.
